So it’s a little after 10:00 pm and I am bored. I can’t sleep, I’m not tired, and I’m antsy to do something. I’ve been sitting and relaxing for hours being lazy, then all of a sudden, I have the urge to do something.
Have you ever found yourself pacing around, making multiple trips to the fridge and then closing the doors only to have nothing in hand? Well that’s me. I can’t count how many trips I have made to the fridge and each time, I returned to the couch empty handed. You’d think that after the third, fourth, and even fifth trip… if I hadn’t put anything new in the fridge, it ain’t gonna be there. It’s not a miracle fridge! Then a few minutes later, I made a new trip to the pantry and repeat.
Ugh! I’m bored. This is killing me. There’s nothing to do (well, lots of cleaning but not interested) and nothing to snack on. By this time, it’s almost 10:45 pm. Most normal people are either in bed or getting ready for bed. Me… I’m ready to eat. I just want something fast and it’s got to be chocolate but not too rich. Is that too much to ask for?
Just when I was about to give up, I saw one of the most wonderful things in the world at the corner of my eyes…
Even more awesome, there was a full bag of it! Untouched and just begging to be used. So what can I make that’s awesome, chocolate, and fast? (I know what you’re thinking and you’re wrong. NOT chocolate chip cookies. C’mon now!)
Ba Da Bing, Ba Da Boom! CHOCOLATE SOUFFLE!!!!
I’m just salivating at the thought of it. If you’ve never tried it, you need to! It’s just awesome! Chocolate Soufflé is like a warm, airy, chocolate bite of heaven. Don’t know what it is, then Google it (or keep scrolling down and go to the next page to The Art of Souffléism).
I remember making my first soufflé. It was a total flop. Literally, it flopped. The rise looked beautiful, tall, and then like the Leaning Tower of Pisa it went. Then, my second soufflé was a little dense but it deflated. Then a third, and a fourth. After a few research and some practice… I have not made a bad batch since. I’ve made a lot and my muffin top will attest to it.
I’ve tried many chocolate soufflé recipes. Some were great, but none of them really wowed me. So I came up with this recipe. This is a recipe that I have tweaked continuously within the past year. I absolutely love this recipe. Did I mention, I L-O-V-E chocolate. Give me anything with chocolate on it, I will eat it! I can eat 2 soufflés in one sitting. I just love the richness of the dark chocolate and when it is combined with coffee and cinnamon? Wow! That’s a marriage of flavor!
